1 8 Oz. package creamcheese
1 large tub cool whip or heavy whipping cream
2 cups coconut shredded (I use unsweetened)
1 15 oz can pineapple chunks in juice or equivalent fresh
Reserve 2 tbsp. Pineapple Juice
Maraschino cherries (garnish)
1 tbsp. Rum flavouring or rum
1/4 cup white sugar
Beat cream cheese, sugar and rum extract.
Fold in cool whip reserving 1/2 cup or beaten cream, fold in coconut reserving 1/2 cup, pineapple juice and pineapple reserving a few pieces for garnish.
Line a 8 inch round pan with saran pour mixture in. Cover entire pan with saran. Freeze for 4 to 6 hours.
Remove place on serving plate. Use reserved cool whip or cream to cover, cover with coconut and pineapple and cherries.
Serves 6 to 8
