4 cups grated zucchini
2 large eggs
1 cup Parmesan
4 green onions
1/2 c cornstarch
Salt
Ground pepper
Oil for frying
3 - 4 cups shredded cheddar
Squeeze zucchini in tea towel and leave overnight it dries the zucchini so it doesn't stay wet and soggy.
2. Combine zucchini with egg, Parmesan, green onion, and cornstarch. Season with salt and pepper.
In large skillet, add oil use 1/2 cup of zucchini mixture onto one side of the pan and shape into a square. Cook til light brown. About 4 minutes per side. Drain on paper towel. Once all patties complete place pattie back in pan with cheese till melted. Serve immediately.
